A New Mexican Thanksgiving: Southwest Inspired Salad
This is not your typical salad. It’s a visual stunner on the table and tastes wonderful. With home fried tortilla strips and a pomegranate green chile vinaigrette, it will make a delightful pairing to your green chile fried turkey.
Southwest Inspired Salad
- Red Lettuce Head
- Spinach Bundle
- Pine nuts
- Candied Pecans
- Green Chile Pomegranate Vinaigrette
- Tortilla Strips
- Queso fresco cheese
Green Chile Pomegranate Vinaigrette
- ¾ Cup Pomegranate Seeds
- 1 Roasted Chile pod or ¼ Cup
- ½ Cup olive oil
- ¼ Cup Pure Maple syrup
- 1 Tbsp Lemon Juice
- 1 Tbsp Apple Cider Vinegar
- 1 tsp Dijon Mustard
- Pinch of salt
Add all ingredients to a blender and blend till smooth.
Roughly cut red lettuce and spinach and toss together with Vinaigrette. Top the salad mix with pine nuts, avocado, tortilla strips, Queso fresco, and Pomegranate Seeds.
