JimBob – Master Smoker

Jim Leon, from JimBob’s Food Service, has been offering his tasty BBQ creations for over 6 years in the Mesilla Valley. His offerings have been available for private catering and individual burrito sales. But for those who have been lucky enough to enjoy his food, know just how talented he is. Jim has recently expanded his catering menu to include alternative diet options – gluten-free, vegan, and vegetarian. Jim began this endeavor 6 years ago when he was preparing smoked meat by the pound and selling burritos to local businesses. It has now grown into an online entity, that allows for Jim to offer online ordering. Recently, he has delved into the world of vegan cuisine. He offers vegan donuts, vegan-wurst, and even vegan steaks!

Even though he is capable of creating meatless foods, Jim’s passion is BBQ Meat Smoking. Jim discussed his process and preference for preparing his smoked and BBQ meats. “Brisket is very popular in Las Cruces” according to Jim. So he will purchase a whole packer brisket, trim down the fat to 1/8 inch layer, and add the dry rub at least 24 hours before smoking it. Leaving a small amount of fat, helps to keep the meat moist during the smoking process. His favorite dry-rub recipe is very simple- equal parts: Kosher Salt and Cracked Black Pepper. Using the larger granules help to adhere to the seasonings to the meat.
Jim also started off by creating his own small meat smoker, by converting a basic backyard charcoal grill. One of the websites that he swears by is amazingribs.com. Jim suggests using a rectangular shaped grill, and using a charcoal base with wood on top of the coals. Jim believes that “it is important to off-set the meat from the heat, in order to create a convection cooking atmosphere”.
