Pork and Sweet Potato Breakfast Hash
(Gluten-Free, Paleo, Dairy-Free)

There’s something so amazing about the aromas of sage and thyme breakfast sausage wafting through your kitchen. It reminds me of lazy weekends with my Mom, making a late breakfast complete with fresh orange juice and toast.
This is my version of the traditional breakfast hash made with ground pork, dried herbs, onion, and sweet potatoes. This recipe can be customized by changing the potato variety, adding a bit of chile, or even topping with a over-medium egg. It is a very simple recipe but full of rich flavors. I will often make this recipe over the weekend and save a few portions to be reheated during the busy work week.
My favorite pork for this recipe is from Kyzer Farm, which is located in Albuquerque. Also, this pork works great in this recipe because it is lean and isn’t overly greasy when prepared.
INGREDIENTS
1 lb Kyzer Farm ground pork
1/4 cup diced onion
2 tsp dried sage
1 tsp salt
1 tsp ground black pepper
1 ½ tsp dried thyme
⅛ tsp red pepper flakes (optional)
1 ½ Cups of cooked Sweet Potato (diced)
- Prepare your potato ahead of time (microwave your potato if in a time crunch)
- Dice potato into bite-sized pieces
- Add seasoning to ground pork and place in skillet over medium heat
- Incorporate diced sweet potato once pork has begun to brown
- Continue to simmer until done, top with an egg if desired
- Serve and enjoy!
