Mexican Stuffed Mushrooms
I am a lover of all things ‘shrooms. And I am aware, that this food isn’t for everyone. I like the flavor of various mushrooms, but I also enjoy the versatility of this vegetable. They can be added to so many dishes, as well as be the main course. I personally like to prepare stuffed portabellas.
I recently dreamt up the idea of a spicy chorizo stuffed mushrooms, and just had to give it a try. I also wanted to add a bit of cream cheese and corn for texture and flavor. These mushrooms are great as an appetizer or to take to your next pot luck. You can increase the spice factor by adding diced jalapenos and sauteing with the chorizo mixture. Also, feel free to go BIG with this recipe, try it with portabella caps instead!

Mexican Stuffed Mushrooms
Ingredients:
- 6 ounces Mexican chorizo sausage
- 1/2 cup finely chopped onion
- 1/2 cup whole-kernel corn, drained
- 1/4 cup cream cheese
- 1/2 teaspoon salt
- 1/4 cup bread crumbs
- 24 mushrooms (stems removed)
- 1 1/2 cups shredded cheddar cheese
- sliced jalapeno for garnish
Instructions:
- Preheat oven to 400°F.
- Dice chorizo and chop onion and cook in a skillet over medium heat.
- for the last minute of cooking, add the corn and incorporate.
- Drain grease from chorizo and pat with paper towel to remove extra grease.
- Stir together cream cheese, 3/4 cup cheddar cheese, bread crumbs and chorizo mixture.
- Pack mixture into mushroom caps.
- Place mushrooms on a baking sheet and sprinkle remaining cheddar cheese over them.
- Bake for 7-10 minutes or until cheese is melted and bubbly.
