Great Drinks, Spectacular Eats : Spotted Dog Brewery
With a hefty resume including Executive Chef in Oakland, CA at the Rose Garden Coliseum, Sous Chef for Levy Restaurant Sports and Entertainment group, and a graduate from Culinary Institute of America, its no surprise that Tom Drake has found success here in Las Cruces. Drake is not only a full-time business owner, but a part-time instructor for the Culinary Arts Program at DACC. Drake is the owner of Colloquium: Mobile Culinary Unit, a food truck that has been operational for over a year in Las Cruces. Drake is well-known in Las Cruces for his Colloquium catering services, which range from private parties to grand opening business events. He also currently offers his tasty menu at Spotted Dog Brewery Thursday through Sunday nights. But this is about to change! Spotted Dog is now expanding internally to include a full in-house kitchen, which Drake will be overseeing. Customers can still expect to see some of his unconventional and delicious menu items. The kitchen construction has been completed and Drake expects to be fully functioning by the latter part of May.
Menu items change every week, this allows for Drake to specially construct food items around the featured brews on tap. “There is often special menu items to celebrate seasonal events, holiday, and sporting events ,” says Drake. There are a few conventional pub menu items offered every week: Garlic Herb Fries, Onion Rings, and Green Chile Cheeseburger. But what really sets them apart are the ever-changing fusion cuisine such as: Green Chile Philly, Szechuan Shrimp and Noodles, Balsamic Glazed Salmon, and even a Mega Meat Burger (Angus patty, pulled pork and spicy sausage, on a sesame seed bun!).
The great news is that with the expansion of the in-house kitchen, is that the menu will also grow! There will be an increase of meal periods as well that include Wednesday and Thursday dinner and lunch on Friday.
